I am writing to you today with an urgent message:
KEEP IT SIMPLE, STUPID.
The K.I.S.S. Method is a fool proof way to simplify your life—and with that—I present to you—“LAZY TOSTYS”
The inspiration for this simple bite comes from my Mother-in-Law, Rosa—a quick breakfast go-to in their house is: fried potatoes, tortilla, beans/rice, ground meat(typically chorizo) plus or minus a jalapeño and homemade sals.
There is just something about spicy meat and potatoes that never gets old—a tale as old as time. meat is to potatoes as peanut butter is to jelly.
A couple of ingredients to write down:
Potatoes
Onion
Jalapeño
Ground Meat(Chorizo, Sausage, or Beef)
Tortillas—flour or corn.
Hot sauce
Cheese!







So, if you’ve been reading my posts—you know I have been on a “Jalapeno Rampage”—my attempts to track down a decent spicy jalapeño has been in vain.

Emotionally, I feel as though I have worked through the stages of grief, of never having my inside burned alive, suffice-ly, that is.

The weather here in Eugene has been phenomenal—mid to high 60s for the past 3 or 4 days—I am so here for it. If you’re from Oregon, you know damn well that it rains SO MUCH! So, we defiantly appreciate our sunny days, however far and few between!
As Winter ‘24 Term at Lane Community College comes to an end, and I start to prepare for Spring, all over again—I get so nostalgic. I don’t know why, but nothing marks the passages of time so much as a completed term, or semester in university. Hallmarked by stress and deadlines—we find ourselves so dialed in that we finding our selves lacking the luxury of perspective. WE MADE IT. Another Term, DONE. ✅ Spring ‘24 here I come!
As a Human Services Major, honestly, I have difficulty seeing what my future job in the field is going to look like. As a someone who sees themselves as a career Caregiver—which some might technically classify as apart of the H.S. field—I am excited to go job hunting, being more qualified once my degree is completed.

Ingredients:
• Corn tortillas
• Potatoes, diced
• Onion, diced
• Garlic, minced
• Ground beef
• Salt and pepper, to taste
• Oil for frying
Instructions:
1. Prepare the Tostada Shells: Heat oil in a large skillet over medium-high heat. Once hot, carefully place corn tortillas in the oil, one at a time, and fry until golden and crispy. Transfer to a paper towel-lined plate to drain excess oil.
2. Cook the Potatoes: In the same skillet, add a bit more oil if needed and add the diced potatoes. Cook until they are golden brown and crispy on the outside and tender on the inside. Season with salt and pepper to taste. Remove from the skillet and set aside.
3. Sauté Onion and Garlic: In the same skillet, sauté the diced onion and minced garlic until softened and fragrant.
4. Brown the Ground Beef: Push the onion and garlic to the side of the skillet and add the ground beef. Cook, breaking it apart with a spatula, until it is browned and cooked through. Season with salt and pepper to taste.
5. Assemble the Tostadas: To assemble, spread a layer of the cooked ground beef mixture onto each crispy corn tortilla shell. Top with a generous amount of diced fried potatoes.
6. Garnish and Serve: Garnish your tostadas with your favorite toppings such as shredded lettuce, diced tomatoes, avocado slices, sour cream, salsa, or shredded cheese. Serve immediately and enjoy!
Feel free to adjust the seasoning and toppings according to your taste preferences. And don’t forget to take some mouthwatering photos of your finished tostadas for your blog!
