Another thing you should know about me is that Meatloaf is one of Top 10 favorite foods. A Meatloaf Sandwich is also a delish-bite, if I do say so myself.
My meatloaf recipe has changed from time, to time, to time, to time. Today, I made it with:
Onion
Jalapeño insides
Bread Crumbs
Almond Milk
Salt & Pepper
Ketchup and Valentina Hot Sauce (personal preference)
Additions:
Garlic
Bacon
Egg
Tomato Sauce

As far as cooking goes—I don’t have a ton of culinary training. My Grandmother(s), Mother, and Sister are/were very well versed in the kitchen (intrinsically, and naturally motivated by keeping young’ins alive). So, in that way, I am inspired to create—feeling “ancestorically” entitled in the kitchen is my goal. Not quite there yet. A cooking class, or two will be in my future—for sure.

Ingredients:
• Jalapenos (as many as desired)
• Ground beef or turkey
• Bread crumbs
• Egg
• Onion, finely chopped
• Garlic, minced
• Salt and pepper to taste
• Shredded cheese (such as cheddar or Monterey Jack)
Instructions:
1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. Cut the jalapenos in half lengthwise and remove the seeds and membranes. Be sure to wear gloves or wash your hands thoroughly after handling jalapenos.
3. In a mixing bowl, combine the ground beef or turkey, bread crumbs, egg, chopped onion, minced garlic, salt, and pepper. Mix until well combined.
4. Fill each jalapeno half with a spoonful of the meatloaf mixture, pressing it down gently to fill the cavity.
5. Place the stuffed jalapenos on the prepared baking sheet.
6. Bake in the preheated oven for 20-25 minutes, or until the meatloaf is cooked through and the jalapenos are tender.
7. Sprinkle shredded cheese over the top of each stuffed jalapeno and return them to the oven for another 3-5 minutes, or until the cheese is melted and bubbly.
8. Remove from the oven and let cool slightly before serving.
9. Enjoy your delicious stuffed jalapenos with meatloaf as an appetizer or main dish!
