Ep. 18: Mini Zucchini Sliders ft. Spring Semester 📚

Hey everybody! ⭐️

So yesterday I compiled a 14-day meal-plan, including leftover days—and today we are going to execute!

Instead of doing Dirty Rice for Day 1—like I thought yesterday—we are going to do Mini Burgers. (Which, we’re scheduled for day #2–but whatevs.)

I found this recipe while browsing Pinterest—and felt inspired to recreate it in one of my episodes. They don’t include Onion or Tomato in their version—so that will be my twist.

Today’s meal cost was about $4—thankfully, we don’t have tax here in Oregon.

1lb Frozen Turkey: $2.79

1 Zucchini: about $0.50

1 Roma Tomato: $0.20

Cheese: $0.50

1/4 Onion: >$0.50

Total: $4.49

Mind you, I bought larger quantities, and these are approximately equivalent costs to what I will be using for this meal.

$4.49 for a meal isn’t bad—my remaining budget is $45.51 for 13 days! That is an average of $3.5 a day—we will see if I can pull it off. So far, so good! 🙂

These were particularly fun to make—I love getting hands on with the food I am cooking.

As far as Turkey is concerned—the fresh Tomato, Onion, and Jalapeno are essential. Turkey doesn’t have a super high fat content—and can turn out dry. A fresh bite of a juicy tomato helps offset that.

For a budget meal—this probably takes the slider. Oh, and if we were wondering—NO the Jalapeños failed the spice-test. VERY high in aroma—very little spicy. I am disappointed and surprised by the aroma.

Well, I reckon that wraps another meal for Daniel, on Daniel Eats!

P.S. Spring Semester started today—I haven’t even looked at my assignments—okay, maybe I peeked. lol
