Ep. 52: Pork Chops + Chocolate Chip Cookies + French Fries ft. Billy & Daniel’s Summer Camp! 🏕️😜

Well, here we are, a second time! Life is funny like that sometimes. As a writer—you have to prepared for the spontaneous deletion of your work/material. Typically most word editors save by the minute so nothing great is ever lost. WordPress’s “jetpack” doesn’t have that feature.

Not mad, I swear. I think I got most of my anger out while writing this—the best revenge in this case. Haha. 😆

I had just finished writing this whole blog post and accidentally discarded my changes! NO!!


Anywho—I wouldn’t be a blogger if I didn’t enjoy blogging! 🙂 If you have been keeping track, you might have noticed that we *skipped* over episode 50. Well folks, that was no accident! I have some very exciting news to announce, and am saving that episode to do so!

I am waiting on a couple more confirmations prior to making the announcement 🙂 So, here we are at EPISODE 52!

You can say we have been eating very, very well here on the farm. Everything from fried fish, fresh baked bread, delicious cookies, and mouth-watering steaks and chops. My Pa and I are two fat little piggies!

I wouldn’t be much of a blogger/photographer if I didn’t post photos! HELLO! I gotta have proof for you foos’!

I’ll be honest, the French Fries were a spontaneous afternoon snack—and were quite tasty! I cooked them two ways—Air Fried, and Traditionally Fried. They were both were delicious!

in one day, we had cookies, French fries, and pork chops. SEND HELP. We need a stomach pump over here folks!

I am in the process of writing the next blog, concurrently to this one—and I am saying this as evidence that we have been EATING SO MUCH FOOD! What is wrong with us?! IS THERE NO OFF BUTTON???

I think we will survive, somehow.

My Pa and I are having a good time—filling our days with TV, Video Games, Gardening, Cooking, and chit-chatting. I am very thankful for this time I have been given with him. The days I am in right now I will look for on years to come. Knowing we don’t have much time left together makes it all the sweeter—and I admit that I don’t always see it, when I am in that moment. And I do see it, eventually.

My sister refers to our time together here as “Billy and Daniel’s Summer Camp”—not far off. I would appreciate a little more regiment, imo. lol. It turns out I am the camp counselor and my pa is the sprite excited to see what activities we have scheduled for the day. Well, someone had to interpret it this way—might as well be me. Maybe we are each two kids without a counselor in sight; we are a dangerous combination. I like this.

For your enjoyment, I have attached my go-to simple Chocolate Chip Cookie Recipe. 🙂 Use at your own risk. lol The temptation might be too great for some of you.

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semi-sweet chocolate chips

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Mix Wet Ingredients: In a large bowl, cream together the softened butter, granulated sugar, brown sugar, and vanilla extract until smooth and creamy. Add the eggs one at a time, beating well after each addition.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
  5. Add Chocolate Chips: Stir in the chocolate chips.
  6. Scoop Dough: Drop rounded tablespoonfuls of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  7. Bake: Bake in the preheated oven for 9 to 11 minutes, or until the edges are golden brown but the centers are still soft.
  8. Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
