Ep. 54: Red Cabbage Salad ft. RuneScape! 🗡️

Hey folks! WE have landed at Episode 54; and yes, don’t remind me about Episode 50: it’s coming! Ya’ll are going to poop your pants with my surprise announcement—plus recipe! I would never leave ya’ll hanging without a tasty bite!

Happy Monday, July 1st! (As I write this, at least) I hope that whenever and wherever you find yourself, you are Happy, Healthy and Wealthy! ⭐️

Folks, if you like Coleslaw, you are going to LOVE this recipe! Another Pa special, if you will. We have had this cabbage sitting around for, maybe three weeks? Well, it definitely got used—and then some.

I had no idea what direction my Dad was going to take this cabbage, but in my opinion, he did all the right things. I thought he was stretching it with the addition of Corn, but hey, it’ll get folks talking about it—plus—it’s totally substitutable!

The base recipe is Red Cabbage, Red Onions, Pickle Juice(plus or minus pickles), Mayo/Miracle Whip, WHOLE GARLIC FOLKS, plus or minus corn! My dad was thinking about adding Cheese—that is a “no-go” for me folks. He can get carried away.

Ya’ll will have to let me know how it turns out! I think we have another head of cabbage in the fridge 🤔 😆

We have had a myriad of bites this past week: fried potatoes, chicken wings, strawberry cobbler, red cabbage coleslaw, pork chops, cookies, banana bread, and chocolate covered raspberries, to top it all off. I have probably gained 10lbs(I am afraid to check the scale lol 😝).

In other news, I will be back in Eugene in the next week or so—maybe I’ll find a bite or two to share with ya’ll!—stay tuned. My sis is going to pick me up—maybe she’ll surprise me with a niece or nephew. lol

If you’re wondering why this Episode is featuring RuneScape—well that is a simple question. I have been playing it—again! For those of you who don’t know, I am a long-time RuneScape(r). I remember trading my classmate a CD-ROM or two (of games),, in exchange for a high level account that their cousin wasn’t using anymore. The best trade of my life, still to this day—even though that isn’t my main account anymore, it’s still a hall of fame account lol.

All of this to say, if you would like to play with me, and join a clan, of 30, something year olds, who have been playing since childhood.

Red Cabbage Coleslaw Recipe

Ingredients:

  • 4 cups red cabbage, thinly sliced
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup pickle juice
  • 1/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • Optional: 1 tablespoon chopped fresh dill or parsley for garnish

Instructions:

  1. Prepare the Vegetables:
  • Thinly slice the red cabbage and red onion.
  • If using fresh corn, cook it and cut the kernels off the cob. If using frozen corn, thaw it. If using canned corn, drain it.
  1. Make the Dressing:
  • In a small bowl, whisk together the pickle juice, mayonnaise, apple cider vinegar, sugar, salt, and pepper until well combined.
  1. Combine Ingredients:
  • In a large bowl, combine the red cabbage, corn, and red onion.
  • Pour the dressing over the vegetables and toss until everything is well coated.
  1. Chill and Serve:
  • Refrigerate the coleslaw for at least 30 minutes to allow the flavors to meld.
  • Before serving, give the coleslaw a good stir. Garnish with chopped fresh dill or parsley if desired.
