Ep. 56: Fourth of July 🇺🇸 Ft. Stuffed Peppers! 🫑

HAPPY FOURTH OF JULY 🇺🇸 YA’LL! I HOPE IT IS MAGICAL!!

I am not sure if we have anything planned—last year…we ended up throwing poppers at each other, watching the fireworks show, and going to bed early? Idk, last year was a blur, tbh.

Well, last night I got a little cantankerous—and decided to stuff two peppers. They turned out DIVINE! They literally bursted when I attempted serving myself one.

Naturally, I put whole cloves into the rice—like a boss—duh. You have to take my word for it, folks!

So, clearly, I had a great time. Recipes that involve a little more hands-on work is always fun to me. One of the reasons I enjoy cooking is because of the “building” involved. Some days I feel like a warlock between herbs and spices—other days I feel like a Michelin awarded food artist. lol

Well, today is the day folks: The Fourth Of July. Today means something different to each person. For some folks it’s about the food, others it’s about the gathering of loved ones, and others still, celebrating this country and everything it has to offer. There is truly no wrong way to celebrate today! ⭐️

However, just to clarify a couple of things…

The Fourth of July, also known as Independence Day, is a federal holiday in the United States that commemorates the adoption of the Declaration of Independence on July 4, 1776. On this day, the thirteen American colonies declared their independence from British rule. The Declaration of Independence, primarily authored by Thomas Jefferson, proclaimed the colonies’ right to self-governance and their separation from Great Britain.

I wonder how terrible Great Britain was for them to sail to “new land”. Who was Thomas Jefferson’s ancestors? These are just a couple of questions that I have. Ironically I remember them not being happy about the taxes the British Government was charging them…come to find out, Taxes were implemented here, just the same…Hmm. Something is sus here folks.

Anyway, I don’t have any other conspiracies to add today…lol

Stuffed Peppers Recipe

Ingredients

  • 4 large bell peppers (any color)
  • 1 lb (450g) ground beef or turkey
  • 1 cup cooked rice
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1/2 cup ketchup
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Bell Peppers:
    • Cut the tops off the bell peppers and remove the seeds and membranes.
    • If necessary, trim the bottom of the peppers slightly to help them stand upright.
    • Lightly brush the outside of the peppers with olive oil.
  3. Cook Filling:
    • In a large skillet, heat 1 tablespoon of olive oil over medium heat.
    • Add the chopped onion and cook until softened, about 3-4 minutes.
    • Add the minced garlic and cook for another 1 minute.
    • Add the ground beef (or turkey) and cook until browned. Break it into small pieces as it cooks.
    • Drain excess fat if needed.
    • Stir in the diced tomatoes, cooked rice, ketchup, salt, and pepper. Cook for 5 minutes, allowing the flavors to meld together.
    • Remove from heat.
  4. Stuff Peppers:
    • Stuff each bell pepper with the beef and rice mixture, pressing down slightly to pack it in.
    • Place the stuffed peppers in a baking dish.
  5. Bake:
    • Cover the dish with aluminum foil and bake for 30 minutes.
    • Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender.
  6. Garnish and Serve:
    • Remove the stuffed peppers from the oven and let them cool slightly.
    • Garnish with fresh parsley if desired.
    • Serve warm.
