I have been wanting to bake a pie for a while now—-so I picked up some necessities at the store last time we went to town. Apple, Blueberry, and Cherry were the three fillings that I found.
A few boxes of Pie Crust, and a few more canned filling—I was off to the races before I even knew it. This being my first time making a pie, I didn’t know that a normal pie required 2 cans of filling. My pie might have been a little shallow, but it wasn’t shallow in taste!
Maybe it could have been baked a smidge longer…eh, who is to know?
It passed my dad’s inspection.



Preparing this pie was fun! I need a little practice rolling dough though—lol. I had difficulty getting it to the required 9.5 inches, but eventually, with a few attempts, I succeeded—as seen in the photos! Duh!
I don’t know if I already said this, but. I should have added a second can of Cherry Filling—I thought 1 would be sufficient, so I only purchased one. It ended up working out though—maybe not the most filling, but definitely the most tasty! 😋
I sprinkled a little Sugar over the cherries prior to putting the topping on. Melted butter would have been appropriate along the top crust prior to baking 🙂 Oh, well.
Ya’ll, my phone took a dive in the bathtub yesterday night. 😦 It is an IPhone XS, so I know it is water-resistant, butttt my CAMERA STOPPED WORKING. Hopefully it’s temporary! Ya’ll know how much I love taking food pics! No Camera, No food Pics, No blog. Hello! (I think I have an IPhone 7+ that I might be able to use to photograph)

Cherry Pie Recipe
Ingredients:
- 4 cups fresh or frozen tart cherries
- 1 to 1 1/4 cups granulated sugar (depending on tartness of cherries)
- 1/4 cup cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional)
- 2 tablespoons butter, cut into small pieces
- 2 pie crusts (store-bought or homemade)
- 1 egg (for egg wash)
- 1 tablespoon water (for egg wash)
- Additional sugar for sprinkling (optional)
Instructions
- Preheat the Oven:
Preheat your oven to 425°F (220°C). - Prepare the Filling:
- In a large mixing bowl, combine the cherries, sugar, cornstarch, lemon juice, vanilla extract, and almond extract if using. Mix until the cherries are well coated.
- Assemble the Pie:
- Roll out one pie crust and fit it into a 9-inch pie dish. Trim the edges.
- Pour the cherry filling into the crust, spreading it out evenly.
- Dot the filling with small pieces of butter.
- Roll out the second pie crust and place it over the cherries. Trim the excess and crimp the edges to seal.
- Cut a few slits in the top crust to allow steam to escape.
- Egg Wash:
- In a small bowl, beat the egg with 1 tablespoon of water. Brush the top crust with the egg wash.
- Sprinkle additional sugar on top if desired.
- Bake:
- Place the pie on a baking sheet to catch any drips.
- Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
- If the edges of the crust start to brown too quickly, cover them with foil.
- Cool:
- Allow the pie to cool for at least 2 hours before serving. This helps the filling set.
