Ya’ll, for those of you who have been following along, know that I have been in a two-year program to earn my Associates Degree in Human Services. Well, that has been all fine and well, and I am very happy with my overall decision to attend Lane Community College.
Well, recently, my degree is requiring me to attend ”in-person” classes, versus the “online” classes I am familiar with. That is all fine and well—and I don’t necessarily have to, if I don’t want to.
I really enjoy online courses as it allows me to enjoy my freedom and be whenever and where ever I want to be, and STILL earn college credit. Well, with that having been said, I started looking around for reputable “Online Colleges” or other colleges with similar degree programs offered 100% online. I understand that beggars, can’t always be choosers, so I would be just as happy finishing my Associates Degree at Lane Community College. But, again, I don’t necessarily have to…
Lo-and-Behold, I stumbled across Western Governors University! They are widely known for the Online Nursing Programs. They also offer a wide range of Bachelor and Master Degree’s 100% Online. Just my style!
Here is the exciting news: my start date is August 1st for the Health and Human Services program offered at Western Governors University! This way, I can still earn my degree, plus some, and still attend enjoy the freedom of an “Online Environment”.

There are only a couple more steps to complete before my start date of August 1st. My counselor and I have a meeting scheduled on the 15 to finalize my enrollment!
I am excited to earn my degree because it will allow me to more effectively help and serve folks in crisis, and poverty.
Well, as we move on, my excitement for my future enrollment was doubled upon the realization of my Dad’s possession of Walleye. AGAIN, folks, another thing you should know about me is: my favorite fish is Walleye.

I don’t know if any of you folks reading this have ever had Walleye—-well left me tell you…it is the single tastiest type of fish you could have dream of eating. It’s widely enjoyed because of the lack of fishiness.
My second favorite would probably have to be Catfish, followed by Bass.
My Dad is a supreme fisherman, who taught my 3 siblings and I everything he knows about baiting and catching fish. His hallmark, if you could imagine. Personally, I think fishing is a really marvelous skill to have; it can really come in useful in a pinch. The idea of having access to an unlimited food supply is great! Just need to get my firemaking skills up to par!

Simple Fried Walleye Recipe
Ingredients:
- 4 walleye fillets
- 1 cup all-purpose flour
- 1 cup cornmeal
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 2 eggs
- 1/4 cup milk
- Vegetable oil (for frying)
- Lemon wedges (for serving)
- Fresh parsley (optional, for garnish)
Instructions:
- Prepare the Coating:
- In a shallow dish, mix the flour, cornmeal, salt, pepper, paprika, and garlic powder.
- In another shallow dish, whisk together the eggs and milk.
- Heat the Oil:
- Pour about 1/2 inch of vegetable oil into a large skillet. Heat the oil over medium-high heat until it reaches about 350°F (175°C). You can test the oil by dropping a small piece of bread into it; if it sizzles and browns quickly, the oil is ready.
- Coat the Walleye:
- Dip each walleye fillet first in the egg mixture, ensuring it’s fully coated.
- Then, dredge the fillet in the flour mixture, pressing lightly to ensure an even coating.
- Fry the Walleye:
- Carefully place the coated fillets in the hot oil. Fry for about 3-4 minutes per side, or until the fish is golden brown and flakes easily with a fork.
- Avoid overcrowding the pan; you may need to fry in batches.
- Drain and Serve:
- Use a slotted spoon or tongs to remove the fried fillets from the oil. Place them on a paper towel-lined plate to drain any excess oil.
- Serve immediately with lemon wedges and garnish with fresh parsley if desired.
