Welcome to Episode 62!
For today’s recipe we have French Toast, Daniel-Style! (Which is just plain-jane lol)
While my sis and her bo-thang were in Mexico, I assumed my “Manny Responsibilities” and kept the house from falling into complete and utter chaos. It would have taken just about 6 days to reach that boiling point (the kids are fairly self-reliant and smart), AND, it surely would have all crumbled on day 7.
I learned very quickly that some folks (kids) are picky eaters, and others are genetically hardwired that way; who knew. The safest and most beloved recipe I could make: French Toast. It received a 4/4 kid rating(sugary bread, who would have known), and was given rave reviews: “Daniel, it was great! It didn’t taste like eggs at all!”
What are some foods that you, or your young’ins refuse to eat? Any picky eaters in your household?
So, with mad ravings about it, I knew it had to be thoroughly documented




I think everyone reading this knows the basic recipe for French Toast; I didn’t deviate. I did add a very liberal amount of Vanilla Extract—my award winning, kid approved secret.
We had a fantastic time while the parents were gone. It was not without our disagreements, negotiations, and apologies—but we made it! We watched America’s Top Model, played Mario Cart, and so much Fortnite! 😁
In other news, there is only a few more days before my first official day at WGU; I am excited! 🙂
The temperature maxed out at 75 today and raining—not complaining in the slightest. The blaring heat (90ish) has been withering old flower—the cooler weather is welcomed!

Simple French Toast Recipe
Ingredients:
- 4 slices of bread
- 2 large eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon (optional)
- 1 tbsp butter
- Maple syrup, powdered sugar, or fresh fruit for serving (optional)
Instructions:
- Prepare the Batter:
- In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon (if using).
- Soak the Bread:
- Dip each slice of bread into the egg mixture, ensuring both sides are well-coated. Let them soak for a few seconds to absorb the mixture.
- Cook the French Toast:
- Heat a large skillet or griddle over medium heat and add the butter.
- Once the butter is melted and bubbling, add the soaked bread slices to the skillet.
- Cook each side for about 2-3 minutes, or until golden brown.
- Serve:
- Serve the French toast hot with your choice of toppings like maple syrup, powdered sugar, or fresh fruit.
