How are everyone’s left overs looking? We still have about a breast left of Turkey. Eventually you run out of ideas.
Since tacos are naturally the best food ever, I have had them two nights in a row.
Here is the photo evidence 🙂 I didn’t take any photos of the finished project, maybe a few crumbs.
In other news, I ate Dominos last night, featuring Jalapenos once again, and I am sincerely regretting that choice. My bum is pretty spicy this morning 💩

Turkey and Jalapeno Taco Recipe
Ingredients:
For the Turkey:
1 lb ground turkey
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
2 jalapeños, seeds removed and finely chopped (adjust based on your spice preference)
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika (optional)
Salt and pepper, to taste
1/4 cup chicken broth (or water)
For the Tacos:
Soft or hard taco shells (flour or corn)
1/2 cup chopped fresh cilantro
1/2 cup shredded lettuce or cabbage (optional)
1/2 cup diced tomatoes
1/4 cup finely diced red onion
1 avocado, sliced
Lime wedges for serving
Salsa or hot sauce (optional)
Instructions:
1. Cook the Turkey:
Heat the olive oil in a large skillet over medium heat.
Add the diced onion and cook for 3-4 minutes until softened.
Add the garlic and chopped jalapeños, cooking for another 1-2 minutes until fragrant.
Add the ground turkey to the skillet, breaking it apart with a spatula as it cooks. Cook for about 5-7 minutes, until the turkey is browned and fully cooked.
Stir in the cumin, chili powder, smoked paprika, salt, and pepper. Mix well to coat the turkey in the spices.
Add the chicken broth or water to the pan, stir, and let it simmer for 2-3 minutes until the liquid reduces slightly, creating a moist filling.
2. Prepare the Taco Shells:
Warm the taco shells according to package instructions (typically in the oven or a dry skillet for a few minutes).
3. Assemble the Tacos:
Spoon the turkey mixture into each taco shell.
Top with fresh cilantro, shredded lettuce or cabbage, diced tomatoes, red onion, and avocado slices.
Optional: drizzle with salsa or your favorite hot sauce for extra flavor.
4. Serve:
Serve the tacos with lime wedges on the side for a refreshing citrus squeeze over the top.
