Ep. 16: Baked Salmon + Spring ‘24 ⭐️

Happy Saturday! It is a warm one today—61 degrees! OMG! If you were curious, Wendy’s has a Dave’s Double Promotion right now—you can get a Dave’s Single for $1, or a Double for $2. Well, yesterday I was digging through my Google Photos, and stumbled across some old photos I took last year. I told you: it’s common for foodies to photograph their meals(and save them for years xD). Well, thankfully I am a foodie, who never deletes their photos! Haha 😆

I remember this meal, particularly. For one, I don’t eat Salmon but once or twice a year—this was one of those occations. I felt particularly inspired, and wanted something fresh, light, and acidic. I am one of those individuals who loves SOUR things—obviously that isn’t a particularly desired flavor with savory food. So a bite of Salmon with a twist of lemon is right up my alley.

These are the before and after pictures—-it was so simple! Cast Iron skillets for the win! ✅ All I did was throw this sucker in the oven at 400ish degrees for 15-20 minutes. I did cook it covered for the majority—I wanted to tomatoes to cook through. I finished it off with a good broil for 10 minutes.

In other news—Spring Semester at Lane Community College is fast approaching—as in, 3 days!!

I am taking Early Childhood Education, Physical Education, Criminal Justice, and Communications this semester! I am excited—I will have ALL of my electives out of the way—and the next year will be 100 in=person Human Services classes (core). WHOOP. It’s going to be a fast year!

Ingredients:

Salmon

Garlic

Tomato

Lemons

Zucchini

Directions:

Slice your veggies

Layer Zucchini, Tomato, Salmon, Lemon with Garlic all over.

Bake at 350-400–Cover with tin foil for 10-15. Broil last 10 minutes.
